When the peanut is dried and blanched after harvest, it tastes like a pea. Roasting brings out the full flavor of the peanut. Most peanuts are oil roasted in our plant. The exception is the dry roasted peanut which is good for health reasons and is sought by people who make peanut butter. hence, it is often referred to as "peanut butter stock" because it has less oil content than the other roasted peanuts.
